The Wurst Kept Secret: Toni’s Sausages Fire Up Concordia’s Oktoberfest
There’s something special about the smell of a sausage sizzling over the grill, especially when it’s made the traditional European way. For Concordia Lutheran College’s Oktoberfest, that irresistible aroma will come courtesy of Toni’s Continental Butcher and Smallgoods, a family-run Toowoomba favourite known for its authentic German sausages.
Toni’s story begins nearly seven decades ago in Metlika, Slovenia, where Toni first mastered the art of European smallgoods before taking his craft to Graz, Austria and eventually migrating to Australia in 1960. His legacy lives on through his family Matt, Sonja, Alex and Steph who continue to uphold his commitment to traditional methods and quality craftsmanship.
“We use the same old-fashioned recipes and even smoke our sausages in a gas and sawdust smoke room,” said Matt. “It gives them that genuine wood-smoked flavour that you just can’t replicate with modern shortcuts.”
The family prides itself on keeping additives to a minimum and using imported German seasonings to ensure every bite tastes like it came straight from Bavaria.
For this year’s Oktoberfest, Toni’s will serve up a mouth-watering lineup including Bratwurst, Weisswurst, Frankfurters and their award-winning Kransky, which recently earned a bronze medal at the global smallgoods competition in Frankfurt.
“The Frankfurter is a great starting point for first-timers,” Matt said with a grin. “It’s smoky, it’s juicy and it just melts in your mouth. It is perfect with sauerkraut and mustard on a roll.”
While Toni’s is proud of its product, the family says it’s about much more than flavour. “We love that Concordia’s Oktoberfest celebrates culture and connection,” said Sonja.
“Food brings people together, and we’re honoured to be part of something that does exactly that.”

Concordia’s Oktoberfest has fast become one of Toowoomba’s favourite family events. Families flock to the College for an event filled with live music, rides, German food and local entertainment.
“It’s a true celebration of community, a place where everyone feels welcome,” Nicole said.
“Tickets are selling fast, so we encourage families to book early to be part of the fun.”
So, as the grills fire up and the music starts, one thing’s certain, the wurst will be the best at Concordia’s Oktoberfest.
Oktoberfest will be held at Concordia Lutheran College, 154 Stephen Street Toowoomba, on 25 October 2025 from 4pm until 8pm.
